This restaurant chain was originated in Florida and, because of it's success, has spread throughout the Southeast. It's modus operandi is unique in that the raw food is brought to the diner's table where it is cooked fondue-style in pots of oil or seasoned broth. Our charge was to renovate the original restaurant to corporate standards and provide as much seating capacity as much as possible within the available space and to the limit allowed by city zoning restrictions.
